This is just right for the end of summer (it IS coming to an end, I keep getting told), when peaches are a-plenty and a change from apple crumble might be welcome (yes, you can add apple to this, too!). Seems about right for a dessert after a late summer barbecue... These amounts are enough for 10 or 12, so you may want to cut down a bit. Also, there is another kind of peach you can use that is much available locally (see below). (Prep time: 15 mins, Baking: 25 mins.)<br />

This week I thought a refreshing salad and Panini-styled sandwich to compliment the wonderful, cooler late evening weather for supper would be perfect. So, to use the fresh cucumbers, mint and tomatoes that are still coming in, I made this great treat from the Colorado Classique cookbook (available from <a href="http://www.amazon.com/" target="_blank">Amazon</a>). The confetti salad is so easy and yes, you can use canned or frozen (thawed) corn if you can't get it fresh.>>><br />

<b>For the Pear Panini</b></div>
<div style="text-align: justify;">
about 3-4 pieces of thinly sliced cooked turkey breast per sandwich</div>

2-3 slices Emmental cheese</div>
<div style="text-align: justify;">
1 firm but ripe pear thinly sliced</div>
<div style="text-align: justify;">
any type of Asian sweet/hot chili sauce 2 Tbsp. per sandwich (I want to give thanks to a great local neighbour who made the wonderful one I used! Yummy!)</div>

2 slices whole grain bread per sandwich</div>
<div style="text-align: justify;">
butter or cooking spray</div>

Assemble sandwich by spreading chili sauce on one slice of bread, next add turkey, pear and then the cheese before the last slice of bread. Spray the bread with cooking spray or use butter. Place on hot grill or in skillet turning once (if you have a Panini maker or a George Foreman grill they'd be great). Cook until cheese melts and nicely browned.</div>

<b>For the Confetti Salad</b></div>

2 large cucumbers</div>
<div>
1/3 cup red wine vinager (vinagre de vino tinto)</div>

1 tbsp sugar</div>
<div>
1 tsp salt</div>
<div>
4-5 ears sweetcorn (see comments in introduction above)</div>

3 large tomatoes, seeded, coarsley chopped</div>
<div>
1/3 cup chopped red onions</div>
<div>
1/3 cup chopped fresh mint (hierbabuena)</div>
<div>
3 tbsp olive oil</div>
<div>
salt & pepper to taste</div>

Cut cucumbers in half lengthwise, scrape seeds out. Cut halves into diagonals 1/2 inch wide. Place cucumber in large bowl. Add vinegar, sugar and salt - let stand at room temperature for about 1 hour, stir occasionally.</div>

Meanwhile, cook corn in boiling water for 3 to 5 minutes. Cool corn to cut, from cob, to yield about 2 cups. Add corn, tomatoes, onion, mint and olive oil to the cucumbers and toss to mix well. Season with salt & pepper.</div>

<b>CASTELLAR</b> Members of the Seprona nature conservation unit of the Guardia Civil recently confiscated ten amphorae and the same number of <a href="http://en.wikipedia.org/wiki/Ammonoidea" target="_blank">ammonite</a> fossils, some of which are quite large, at a souvenir shop in the castle, where they on display for sale. Seprona carries out routine inspections of such shops as part of its function as a protector of items of historical interest. The fossils come under the protection of laws related to wild native species - these, fossilised sea life, are presently considered extinct although there are plenty to be found embedded in rock in various places throughout Los Alcornocales Nature Park. The amphorae, usually of Roman origin and used for transporting wine and other liquids, are under the aegis of Historical and Patrimonial laws. The items are now being inspected by experts from the Culture and Environment Council of Andalucía.</div>

<b>SAN ROQUE / Torreguadiaro</b> An unexpected visitor to the beach at Torreguadiaro forced the red danger flag on the beach at Torreguadiaro yesterday, and to warn of the possibility of danger from Sotogrande to Cala Sardina. The blue shark <span style="font-family: inherit;">(</span><i style="background-color: white; font-family: inherit; line-height: 19.1875px;">Prionace glauca)</i><span style="background-color: white;"><span style="font-family: inherit;"><span style="line-height: 19.1875px;"> appeared very close to shore at about 9.30, near the Sotogrande breakwater; it was a worker at one of the beach bars who later gave the alarm. While this small, 2m shark is not considered dangerous to humans, the red flag went up at about 10, and was kept there until 3 in the afternoon with no further sightings. The Seprona unit reported seeing that the shark presented an injury close to the head, possibly caused by a fishing net, and thus causing the erratic </span></span><span style="line-height: 19.1875px;">behaviour</span><span style="font-family: inherit;"><span style="line-height: 19.1875px;"> observed at the time.</span></span></span></div>

12 pita bread pockets (<i>pan de pita</i>, easily available)<br />
1/2 cup olive oil<br />
1/2 teaspoon ground black pepper (<i>pimienta seca molida</i>)<br />
1 teaspoon garlic salt (<i>sal de ajo</i>)<br />
1/2 teaspoon dried basil (<i>albahaca</i>, look in dried herbs sections)<br />
1 teaspoon dried chervil (<i>perifollo</i>, at better supermarkets)<br />
<b>Directions:</b><br />
1.<span class="Apple-tab-span" style="white-space: pre;"> </span>Preheat oven to 200º C.<br />
2.<span class="Apple-tab-span" style="white-space: pre;"> </span>Cut each pita bread into 8 triangles. Place triangles on lined baking sheet.<br />
3.<span class="Apple-tab-span" style="white-space: pre;"> </span>In a small bowl, combine the oil, pepper, salt, basil and chervil. Brush each triangle with oil mixture.<br />
4.<span class="Apple-tab-span" style="white-space: pre;"> </span>Bake in the preheated oven for about 7 minutes, or until lightly browned and crispy. Watch carefully, as they tend to burn easily!</div>

This was confirmed this morning by various sources, as the newspaper reported the fire being at La Troyana and we didn't want to get it wrong. Fortunately, the fire did not cause any personal damage, although the fire brigade reported that it originated with a leakage from one of the bombonas in the basement. Material damage was not excessive, either. The paper is not clear either, as to which basement the fire broke out - local sources say it was the one below the bakery, where sacks of flour, two commercial fridges and other supplies caused a great deal of smoke.</span></span></div>

The man looked non-plussed, mumbled something about having to pop over to the bank, etc. He was seen counting cash at his table, with everyone's contribution towards a good, inexpensive meal now blurred by this credit card thing. On being questioned, the owner said he had decided not to offer his customers this service any longer, when the bank, the credit company or the phone company (he was livid, so this was not clear) wanted to charge an extra €29 per month on top of the percentage charged by the credit card company on each transaction. He also told us that he had spoken to many of his fellow restaurateurs on the subject, and most of them had done the same. 'How much do they think they can squeeze us?' he demanded to know.
