Our Once Only Cook's recipe: is a frittata a fry-up?

I want to share readers a great simple breakfast recipe I made today! They say breakfast is the most important meal of the day and that if you want to loose weight or not gain any, NEVER skip it! You can substitute any veggies you have in the fridge or herb flavours you prefer or have on hand, the same format works every time! Before that though let me include a link to a great website for conversions since I often use US measurements: http://www.infoplease.com/ipa/A0001723.html. So here's breakfast:

EASY FRITTATA
1 c. zucchini (calabacín), thinly sliced
1/4 c. sliced pepper (green or red - pimiento, verde o rojo)
1/4 c. sliced mushrooms (champiñones)
2 green onion (cebolleta), with tops, chopped
3 eggs
2 tbsp. water (more, if necessary)
Basil, dried thyme to taste
Spray small Teflon pan with "Pam" or a dribble of vegetable oil. Sauté vegetables in water over medium heat, tossing frequently for 2 minutes or until tender. Beat eggs, add dried herbs. Add more water to vegetable mix if original liquid has evaporated, then pour eggs over vegetable mix, cover with lid, cook undisturbed over moderate heat until eggs have set, 5-8 minutes.
This is a light diet meal that is fast to prepare.
