Below is a great salad I made yesterday in spite of the fact that I don't really like celery; it was delicious! As I mentioned, it is 13 years now as of Jan 1 that I have not made the same thing twice, so in my house if you don't like it, no worries, you won't get it again! I hope your readers will enjoy it as much as we did. I served it with grilled on the BBQ boneless chicken breast that had been marinated 45 minutes in Frank's Red Hot sauce (you can buy this at a number of the grocery stores on the coast, Lidl, etc.). It has a great kick, so for most people a little goes along way. Very refreshing dinner in this heat and so affordable!>>>
Ingredients
4 large tomatoes, sliced crosswise OR 1 clamshell mixed cherry tomatoes cut in half, or a mix
3-4 small purple onions or 1/2 larger onion sliced crosswise
4 stalks celery with leaves, thinly sliced crosswise, leaves torn
Small handful fresh basil, torn
1/4 cup olive oil
3 tablespoons champagne or sherry vinegar
3 tablespoons heavy cream
Salt & Pepper to taste
Preparation
In a large bowl, combine the tomatoes, onion, celery, celery leaves and basil; set aside.
In another bowl, whisk together oil, vinegar, and cream; to combine.
Season with salt and pepper. Pour over salad and toss to coat; serve immediately.
